  • rice - one and a half cup, washed and drained
  • Ghee or oil - 4 tbsp
  • black gram Dal - 2 tsp
  • mustard seeds - 1 tsp
  • fenugreek - 1/2 tsp
  • pea nuts - 2 tbsp
  • curry leaves few
  • onion - 1/2 cup, chopped finely
  • chilli powder - 1 tsp
  • coriander powder - 1 tsp
  • tomato puree - 1/4 cup
  • water - 4 cups
  • coriander leaves - 2 tbsp, chopped
  • salt to taste

How to Make Zesty Tomato Rice with Peanuts

  • Heat ghee or oil.
  • Add mustard seeds.
  • When they splutter, add black gram dal, fenugreek and peanuts.
  • When they turn brown, add curry leaves and onion.
  • When the onion is light brown, add chilli and coriander powders.
  • Add tomato puree, water, salt and rice.
  • When the contents begin to boil, cover the pan and lower the heat.
  • Let the rice simmer gently till all the water is absorbed and rice is cooked.
  • Serve hot, garnished with coriander leaves.
