  • 3 cups - Zucchini (grated)
  • 3 cups - All-purpose flour
  • 2 cups - Whole Wheat flour
  • 1+1 tbsp - Active Dry yeast
  • 4 tbsp - Parmesan cheese (grated)
  • 2 tbsp - Olive oil
  • Salt
  • 1 tsp - Red Chilli flakes
  • Oil
  • 1 tbsp - Sesame seeds for garnishing
  • How to Make Zucchini - Courgette Crown Bread:

    1. Place the grated zucchini in a colander, sprinkle salt, toss and keep aside for a few minutes. Then pat it dry with paper towels and keep aside.
    2. Mix the flours, yeast and parmesan together. Add chilli flakes.
    3. Now add the zucchini, pour some lukewarm water and knead into a stiff, smooth dough.
    4. Place this dough in a greased bowl and let it rest in a warm place for 1.5 hours. The dough will have doubled in size by then.
    5. Knead the dough lightly, divide into 5-7 balls.
    6. Arrange the balls in a pan, brush the top with milk and sprinkle sesame seeds over it. Let it sit again for 30 minutes.
    7. Pre-heat the oven to 400 degrees Fahrenheit. Bake the zucchini bread for 25-30 minutes until bread crust turns golden brown.
