  • 2 cup - zucchini, cut into juliennes (do not peel)
  • 2 cup - mixed capsicums, cut into thin strips (discard seeds)
  • 1 cup - onion, thinly sliced
  • 2 tbsp - Olive oil
  • 2 tbsp - Honey
  • 2 tbsp - cider or Balsamic Vinegar
  • 2 tbsp - yellow mustard
  • salt and pepper to taste
  • How to Make Zucchini and Capsicum Salad:

    1. Soak the onion in ice cold water for 1/2 hour. Drain and pat dry.
    2. Combine onion, zucchini and capsicums.
    3. Whisk olive oil, honey, vinegar, and mustard, salt and pepper together.
    4. Pour the dressing over the vegetable mixture. Toss and serve immediately.
