  • 2 cup - zucchini, cut into juliennes (do not peel)
  • 2 cup - mixed capsicums, cut into thin strips (discard seeds)
  • 1 cup - onion, thinly sliced
  • 2 tbsp - Olive oil
  • 2 tbsp - Honey
  • 2 tbsp - cider or Balsamic Vinegar
  • 2 tbsp - yellow mustard
  • salt and pepper to taste

How to Make Zucchini and Capsicum Salad

  • Soak the onion in ice cold water for 1/2 hour. Drain and pat dry.
  • Combine onion, zucchini and capsicums.
  • Whisk olive oil, honey, vinegar, and mustard, salt and pepper together.
  • Pour the dressing over the vegetable mixture. Toss and serve immediately.
