  • 2 cups - cooked Rice
  • 1/2 cup - Zucchini (chopped)
  • 1/4 cup - Peanuts
  • 1 - Onion (chopped)
  • 2 - Green chillies (slit open)
  • 1 tsp - Garam Masala powder
  • 1 tsp - pav bhaji masala
  • Oil as required
  • 1 tsp - Cumin seeds
  • 1 tsp - shah Jeera
  • A few sprigs - Coriander leaves (chopped)
  • How to Make Zucchini and Peanut Rice:

    1. Heat enough oil in a microwave safe bowl for 40-45 seconds on high.
    2. Add cumin seeds and shah jeera, and cook for a minute.
    3. Add onions, green chillies and salt, cook for 5-7 minutes until the onions turn translucent.
    4. Add peanuts and cook for 2 minutes.
    5. Add chopped zucchini, garam masala powder, pav bhaji powder, and cook for 10 minutes until the vegetables are well cooked.
    6. Add cooked rice, chopped coriander leaves and toss everything gently, cook for 2-3 minutes. Serve hot with potato chips or spicy potato roast.
