Ingredients

  • Zucchini - 2 cups (grated)
  • Self raising flour - 3 cups
  • Eggs - 3
  • Brown sugar - 1 cup
  • Sugar - 1 cup
  • Vanilla essence - 1 tsp
  • Cinnamon powder - 1 tsp
  • Raisins, assorted nuts - 1/2 cup
  • Oil - 1 cup
  • Baking soda - 1/2 tsp
  • Baking powder - 1/2 tsp
  • Salt to taste

How to Make Zucchini Cake

  • Sieve the flour along with baking powder once.
  • Beat the eggs until fluffy
  • Then add sugar, brown sugar, oil and mix well.
  • Then add the flour, grated zucchini and mix well
  • Now add the essence, cinnamon powder, salt, raisins, assorted nuts and mix for 5 minutes.
  • Grease a baking tray with a little ghee/ butter.
  • Dust it with flour so that the cake does not stick once it is baked.
  • Pour the batter up to the half way mark of the tray
  • Pre-heat the oven to 400 degrees F.
  • Bake for 50 minutes.
