Ingredients

  • Zucchini - 2 cups (grated)
  • Self raising flour - 3 cups
  • eggs - 3
  • Brown sugar - 1 cup
  • Sugar - 1 cup
  • Vanilla essence - 1 tsp
  • Cinnamon powder - 1 tsp
  • Raisins, assorted nuts - 1/2 cup
  • Oil - 1 cup
  • Baking soda - 1/2 tsp
  • Baking powder - 1/2 tsp
  • Salt to taste
  • How to Make Zucchini Cake:

    1. Sieve the flour along with baking powder once.
    2. Beat the eggs until fluffy
    3. Then add sugar, brown sugar, oil and mix well.
    4. Then add the flour, grated zucchini and mix well
    5. Now add the essence, cinnamon powder, salt, raisins, assorted nuts and mix for 5 minutes.
    6. Grease a baking tray with a little ghee/ butter.
    7. Dust it with flour so that the cake does not stick once it is baked.
    8. Pour the batter up to the half way mark of the tray
    9. Pre-heat the oven to 400 degrees F.
    10. Bake for 50 minutes.
