  • 1.5 cups - All-purpose Flour
  • 1.2 cups - Sugar
  • 1/2 cup - Butter (unsalted)
  • 1/2 cup - Almond (blanched)
  • 3 - Eggs
  • 1/2 cup - Milk
  • 1 tsp - Baking powder
  • 1/2 tsp - Baking soda
  • 1/2 tsp - Lemon/Orange peel
  • 1 pinch - Salt
  • 1/2 tsp - Vanilla extract

How to Make Almond Butter Cake

  • Finely powder the sugar in a mixer and add butter and mix them well.
  • To this mixture add 2 whole eggs and 1 egg yolk, retain the egg white.
  • Beat them well until it becomes fluffy but not dry.
  • Add vanilla extract to this.
  • Put flour, baking powder, baking soda, salt in a large bowl.
  • Use a sieve to remove lumps of all the dry ingredients.
  • To this, add lemon/orange peel.
  • Mix them well.
  • Add dry ingredients to wet mixture slowly alternating with milk.
  • Finally add some coarsely ground almonds to this and blend them well.
  • Grease a round cake pan with butter and some flour, pour the mixture onto it.
  • Bake the cake in a 350 degrees C pre-heated oven for about an hour.
  • Brush the cake with egg white after half an hour.
  • Arrange whole almond pieces in a regular manner.
  • Insert a thin knife or a tooth pick and it should come out clean indicating the cake is done.
