Ingredients

  • 2 tsp - oil
  • 2 - bay leaves
  • 1 stick - cinnamon
  • 4 - cloves
  • 2 - potatoes, peeled and cut into quarters
  • 10 pieces - cauliflower, cut into chunky florets
  • 1.5 cups - basmati rice
  • 1/2 tsp - dry ginger powder
  • 2 pinches - asafoetida
  • 3/4 tsp - red chilli powder
  • 1/4 tsp - turmeric powder
  • 1/2 tsp - salt
  • 2 cups - water
  • 1/2 tsp - garam masala powder

How to Make Aloo Gobi Ki Tehari (UP Style Vegetable Pulao)

  • Heat oil in a cooker for about 3 minutes. Add bay leaves, cinnamon and cloves to it. Stir it for a few seconds.
  • Add potatoes and cauliflower to it. Stir fry for about 2 minutes.
  • Add all the other ingredients except water and garam masala powder. Stir fry for about 3 minutes. Add water and stir.
  • Close the cooker. Bring it to full pressure on high heat. Reduce the heat and cook for 3 minutes.
  • Remove cooker from heat. Allow it to cool naturally for 10 minutes.
  • Open cooker. Place tehari on serving dish. Sprinkle garam masala powder on it and serve it hot with curd.
