Ingredients

  • 1/2 kg - small potatoes, boiled, peeled
  • 1/4 kg - French beans, strings removed, halved
  • 2 carrots, peeled, cut into strips
  • 1 tbsp - mustard seeds
  • 1/2 tsp - fenugreek seeds
  • 1/4 tsp - asafoetida
  • 10 red chillies
  • 1/2 tsp - turmeric powder
  • 1 tbsp - lemon juice
  • 1/4 cup - oil
  • Salt to taste

How to Make Aloo ka chow chow

  • Heat ½ tsp. oil.
  • Fry mustard and fenugreek seeds and red chillies.
  • Add turmeric and asafoetida and grind to a fine paste.
  • Heat remaining oil. Add carrots and beans. Fry till soft.
  • Add salt, ground paste and cook till crisp but done.
  • Add whole potatoes and lemon juice.
  • This may be served cold or hot.
