  • 3 - big potatoes (boiled, peeled and mashed)
  • 4 tbsp - mustard oil
  • 2 to 3 - cloves
  • 1 - cinnamon
  • 2 - green cardamom
  • 3 tbsp- onion- ginger- garlic paste
  • 1 tsp-garam masala
  • 1 tbsp- coriander leaves(chopped)
  • 1 tsp- red chilli powder
  • 1/2 tsp-turmeric powder
  • 1 tbsp- coriander powder
  • 2-green chillies
  • sugar
  • ghee
  • salt

How to Make Aloo Vada Curry

  • Mix the mashed potatoes with the red chilli powder, coriander powder and salt. Knead the potatoes till it smoothens.
  • Make 4 balls and fry them in oil till golden brown.
  • Keep them on a separate container.
  • Warm mustard oil in kadai and add cloves, cardamom, cinnamon, green chillies.
  • Add the paste and cook.
  • Add red chilli powder to the paste.
  • Add water. Cook well.
  • Add turmeric powder and stir.
  • Add salt and sugar for taste.
  • Add water if needed.
  • Then add garam masala and ghee.
  • Cook well and add the fried balls(Aloo Vada) to the curry. Stir to mix.
  • Add chopped coriander leaves and serve hot with rice or roti.
