Ingredients

  • Amaranth stems - 2
  • Fresh jack fruit seeds - 8 to 10
  • Dried red chillies - 3 to 4, broken into pieces
  • Jaggery (or brown sugar) - 2 tsp
  • Mustard seeds - 1 tsp
  • oil - 2 tbsp
  • Salt to taste

How to Make Amaranth Stem and Jack Fruit Seeds Palya

  • Trim the leaves and scrape the fibrous layer of the stem and cut into 5 cm long pieces.
  • Peel away the thin white skin of jack fruit seeds and cut the seeds into quarters, along their length.
  • Heat oil in a kadai, add mustard seeds.
  • When they splutter, add red chillies.
  • After few seconds, add the stems and seeds.
  • Add about 1 cup of water.
  • Cover and simmer gently.
  • When they are half cooked, add salt and jaggery.
  • Continue to simmer till they are soft. Serve.
