Ingredients

  • 250 g - refined flour or maida
  • 50 g - Nescafe
  • 300 g - sugar (powdered)
  • 250 g - butter
  • 5 - eggs
  • 1 tsp - vanilla essence
  • 2 level tsp - baking powder
  • 3 tbsp - icing sugar

How to Make Anglo Indian Coffee Cake

  • Sift the Nescafe, flour and baking powder together.
  • Cream the butter and sugar well.
  • Add the eggs one by one and mix well.
  • Add the vanilla essence.
  • Slowly add the sifted flour with the other ingredients and fold in the mixture to form a smooth slightly thick consistency without lumps.
  • Add a little milk if necessary.
  • Pour into a greased and papered baking dish or cake tin and bake in a hot oven for 40 to 45 minutes till done.
  • When still hot, sprinkle the icing sugar on top.
