  • 1 cup - chopped arugula/ rocket leaves
  • 1 cup - chopped spinach leaves
  • 1 - large onion chopped
  • 3 - green chillies chopped
  • Salt to taste
  • 1 tbsp - oil
  • 1 - sprig curry leaves
  • 2 tbsp - grated coconut
  • 1/2 tsp - mustard seeds.

How to Make Arugula and Spinach Stir Fry

  • Heat oil in a pan and add the mustard seeds.
  • When they begin to splutter add the onions, green chillies and curry leaves and fry till the onions are slightly brown.
  • Toss in the greens.
  • Add salt and coconut.
  • Cover and cook for a few minutes till all the water dries.
