Ingredients

  • 5 gm - fresh mushrooms
  • 5 gm - lemon grass
  • 1 piece lemon leaf
  • 1/2 cup - coconut milk
  • 5 gm - fried garlic
  • 1 egg - half boiled
  • 20 gm - chicken, boiled and diced
  • 5 gm - coriander leaves
  • 1 tsp - lemon juice
  • 5 gm - red curry paste
  • Salt to taste
  • 1/2 bowl chicken stock

How to Make Authentic Thai Khoy soy soup

  • Heat 1/2 tsp oil in a pan and add lemon leaf, lemon grass and Thai red curry paste in it.
  • Saute the ingredients for one minute and keep aside.
  • In another pan, take half bowl stock and add coconut milk in it.
  • Boil this for one minute and add it to sauteed ingredients along with mushrooms, fried garlic, chicken and egg.
  • Stir for a minute.
  • Add salt and lemon juice and boil it for a minute.
  • Garnish with coriander leaves. Serve hot.
