Ingredients

  • Coconut - 1/2 - grated
  • Cumin - 3 tbsp
  • Green chillies - 10
  • Curry leaves - a few
  • Seasoning:
  • Coconut oil - 2 tbsp
  • Mustard seeds - 3 tbsp
  • Curry leaves - a few
  • Vegetables:
  • Pumpkin - 1 cup
  • Beans - 1 cup
  • Carrot - 1 cup
  • Potato - 1 cup
  • Drumstick - 1
  • Curd - 3 cups
  • Salt to taste

How to Make Aviayal

  • Cut all the vegetables into long thin pieces and cook them with 2 tbsp of salt in a pressure cooker.
  • Grind coconut, green chillies, cumin and curry leaves and keep aside.
  • Heat the oil in a deep frying pan and add seasoning items.
  • Add boiled vegetables and ground coconut mixture, and boil for 5 mins.
  • Add curd and boil for 5-10 mins in medium flame.
  • Serve
