Ingredients

  • Avocado - 2 medium sized, cut into small pieces
  • Coconut milk - 100 ml
  • Carrot - 2 medium sized ones cut into small pieces
  • Onion -1 medium sized - diced
  • Tomato - 1 medium sized - grated
  • Turmeric powder - 1/2 teaspoon
  • Red chilli powder - 1/2 teaspoon
  • Ginger paste - 1 tsp
  • Coriander powder - 1 tsp
  • Salt to taste

How to Make Avocado and coconut curry

  • Heat oil in a pan
  • Add ginger paste to it and cook for 2 minutes.
  • Slowly add the onions and tomatoes. Cook until they soften.
  • Now add the diced carrots and avocado to it.
  • Add the turmeric, coriander and red powder.
  • Add 1 cup water so that it softens completely.
  • Now add the coconut milk. Add salt to taste.
  • Cover with a lid and cook for 5 minutes.
