  • 20 to 25 - tender plump healthy okra
  • 1 tsp - lemon juice
  • 1/4 tsp - turmeric powder
  • 1/4 tsp - tandoori masala
  • 1/2 tsp - sugar
  • 1/4 tsp - dried mint powder
  • 1/4 cup - curd (hung for 45 minutes)
  • 1 tsp - olive oil
  • To taste - salt

How to Make Barbecued Bhindis

  • Wash and wipe okra, checking and discarding any infected ones.
  • Mix all the other ingredients together, in a large bowl.
  • Put in okra and toss to coat with the marinating mixture.
  • Keep aside for 30 minutes or refrigerate, till required.
  • Pierce the okras from side to side into a skewer.
  • Place over hot coals or barbeque or under a grill.
  • Rotate occasionally and cook enough, to tenderize.
  • Brush, with a little oil in between, if required.
  • Serve hot, with other barbequed vegetables, dips and rice.
