Ingredients

  • 2 cups - parboiled (Idli) rice
  • 2 cups - barley
  • 1 cup - whole urad dal
  • 1/2 tsp - fenugreek seeds
  • Salt

How to Make Barley idli

  • Wash and soak the rice along with barley for 3 to 4 hrs.
  • Wash and soak the urad dal for 3 to 4 hrs.
  • First, grind urad dal along with fenugreek.
  • While grinding, keep sprinkling water at regular intervals.
  • The consistency of the batter should be very soft and fluffy.
  • Remove the batter from the grinder and keep it aside.
  • Now, grind the rice with barley to a smooth paste.
  • Mix both the batters along with salt. Cover and keep aside overnight to ferment for 10-12 hrs.
  • Next day, the batter would have raised 2 inches high with tiny bubbles.
  • Pour a ladleful of batter in idli tray and steam cook for 10 -15 mins.
  • Soft and healthy barley idli is ready to be served.
  • Serve hot with chutney of your choice or with sambar and enjoy.
