  • 2 egg yolks
  • Pinch of dry mustard
  • Salt and pepper
  • ½ tsp. sugar
  • Few drops of lemon juice
  • 300 ml. oil
  • 2-3 tbsp. wine vinegar

How to Make Basic Mayonnaise Sauce

  • Combine the egg yolks, seasoning, sugar and lemon juice in a bowl using a wooden spoon.
  • Add the oil drop by drop, whisking well until the mixture becomes thick.
  • Beat in the vinegar – this will thin down the mayonnaise, adjust the seasoning.
