Ingredients

  • 1 cup - grated beetroot
  • 1/2 cup - moong dal
  • 1/4 cup - fresh grated coconut
  • 2 - green chillies, chopped
  • Lemon juice - as desired
  • Salt to taste
  • Coriander leaves - a few springs, chopped
  • Grated carrot - 1
  • Grated radish - soaked in vinegar for a while
  • Grated cucumber
  • 1 - onion, chopped

How to Make Beetroot kosambari

  • Wash moong dal and soak for at least 1 hour.
  • Drain
  • Grate coconut, beetroot, carrot, radish, cucumber and green chillies.
  • Chop onions finely
  • Chop coriander leaves
  • Mix all the ingredients together with salt and lemon juice and serve.
