Ingredients

  • 2 cups - curd
  • Shoots from about 3 Beets
  • 2 tsp - oil
  • 1/2 tsp - mustard seeds
  • 2 - green chillies
  • 3-4 - curry leaves
  • A pinch - asafoetida
  • Salt as per taste

How to Make Beetroot shoot raita

  • Wash and chop the shoots finely.
  • Microwave them with some salt and water for about 4-5 minutes.
  • Beat curd in a mixing bowl and add the cooked shoots, salt and mix well.
  • Heat 1-2 tsps oil and temper with mustard seeds, curry leaves, green chillies, asafoetida and add to the raita.
  • Serve.
