Ingredients

  • Baby potatoes - 1/2 kg
  • Medium sized onions - 4
  • Tomatoes - 3
  • Turmeric powder - 1 tsp
  • Red chilli powder - 2 tsps
  • Salt to taste
  • Sugar - 1 tsp
  • Cumin seeds - 2 tsp
  • Bay leaves - 3
  • Coriander leaves little
  • Oil -1/4 cup
  • Ginger - 1 inch piece

How to Make Bengali Alu Dum

  • Boil and peel baby potatoes (one whistle in pressure cooker).
  • Grind sliced onions, ginger and cumin seeds to a fine paste.
  • In a pan heat oil and sprinkle little salt over the potatoes.
  • Add potatoes and fry till it becomes slightly red.
  • Empty fried potatoes on to a dish. Fry the remaining potatoes
  • In the same oil, add bay leaves, ground masala paste and fry lightly.
  • Add red chilli powder, sugar and fry till the raw smell goes.
  • Add fried potatoes, turmeric powder and salt to taste.
  • Cover and let it simmer for 5 minutes.
  • Arrange on a serving dish and garnish with finally chopped coriander leaves.
  • Serve with parattas or rotis or puris.
