Ingredients

  • Lady fingers - 1 kg
  • Chick pea flour - 1 cup
  • Red chilli powder - 2 tsp
  • Ajwain (carum seeds) - 1 tsp
  • Rice powder - 2 tbsp
  • Coriander powder - 2 tbsp
  • Turmeric powder - 1 tsp
  • Dry mango powder - 1 tsp
  • Garam masala powder - 1 tsp
  • Salt to taste
  • Oil for frying

How to Make Bhindi Kurkuri

  • Wash and dry the okra.
  • Chop off heads and talks of the okra and slit lengthwise into 4.
  • Take 1/2 cup of chick pea flour and mix all the ingredients together in a bowl except rice powder and oil.
  • Add the okra to the bowl, mix well and refrigerate for 2 hours.
  • Mix remaining 1/2 cup of chick pea flour with rice powder and toss with the okra.
  • Heat oil and deep fry in batches until crisp.
  • Serve hot.
