Ingredients

  • 2 cups - basmati rice
  • 1 - big onion (finely sliced)
  • 1 tsp - cumin seeds
  • 3 - cloves
  • 1 piece - cinnamon
  • 3 - green cardamoms
  • 1 - black cardamom
  • 2-3 - bay leaves
  • 1 tsp - red chilli powder
  • 4 tbsp - oil
  • 3.25 cups - water
  • salt to taste

How to Make Bhooga Chawal (Brown Rice)

  • Wash and soak the rice for 30 minutes.
  • Heat oil in a degchi, add cumin seeds, cloves, cinnamon, cardamoms and bay leaves. Saute for a minute.
  • Add the onion and fry on low flame until golden.
  • Add red chilli powder and saute for a few seconds.
  • Add the rice along with salt and water. Mix gently.
  • Cook on high flame until the first boil and then simmer.
  • Cook until the rice is done.
  • Serve hot with mattar paneer, methi aloo, aloo gobi or yellow dal.
