Ingredients

  • 3 - long, large brinjals
  • 2 tbsp - butter
  • 1.5 cups - cream
  • 1 cup - soft cooked corn
  • 1 cup - cooked shredded chicken
  • 1/4 cup - tomato sauce
  • Salt and pepper.

How to Make Bhune baingan ka salad

  • Cut brinjals lengthwise into two. Sprinkle with salt and reserve for 10 mins.
  • Bake till soft but whole. Remove flesh and cool the brinjal skin.
  • Mix flesh with cream, chicken, corn, salt and pepper.
  • Pile them over the six halves of brinjals.
  • Dot with sauce and serve cold.
