Ingredients

  • Bitter gourd - 4
  • Fresh sweet Curd- 2 cups
  • Fresh grated Coconut (Make a paste)- 1/2 cup
  • Lemon Juice (For soaking bitter gourd) - 4 tbsp
  • Salt (For soaking bitter gourd) - 2 tbsp
  • Sugar - 1 tsp
  • Salt as per taste
  • For seasoning:
  • Urad dal - 2 tsp
  • Mustard seeds - 1 tsp
  • Hing - 1/2 tsp
  • Red Chillies (as per your taste) - 3-4
  • Curry Leaves - 5 to 6
  • Fresh Coriander leaves (chopped finely) - 1 tbsp

How to Make Bitter gourd With Fresh Yoghurt

  • Cut the bitter gourd into thin, small slices.
  • Soak the pieces in lemon juice and salt for one hour.
  • After that wash well and squeeze out the water.
  • Fry in non-stick pan till crisp. Drain on paper.
  • Add coconut paste in yoghurt and beat till smooth. Mix in bitter gourd slices.
  • Heat oil and season with all the ingredients given.
  • Add sugar and salt.
  • Pour over the bitter gourds. Then cool and chill in the fridge.
  • Serve cool with rice and salad.
