Ingredients

  • FOR SALSA :
  • 2 large tomatoes
  • diced 1 capsicum or jalapeno pepper
  • seeded and minced 1/2 sweet onion
  • minced 2 fresh limes for juice or vinegar
  • 3/4 cup - fresh coriander leaves chopped
  • 2 - garlic cloves
  • minced 1 tsp - cumin salt to taste
  • FOR BURRITO :
  • 2 -3 whole wheat flour tortillas
  • 1 can - black beans
  • 1/2 cup - grated cheddar cheese

How to Make Black bean burritto

  • Preparation for salsa-
  • Mix all ingredients together.
  • Add salt and ground pepper to taste. Add cumin. Set aside or place in fridge.
  • Preparation for burrito-
  • Heat beans in a pan.
  • Heat tortilla in a separate tawa (no oil, low heat), flipping it every 10 seconds until it's warm on both sides.
  • Place the cheese on the tortilla and once it melts, transfer the tortilla to a plate.
  • Add beans and salsa to the middle of the tortilla.
  • Fold the ends of the tortilla toward the middle and then roll it up.
