Ingredients

  • Brinjal - 1/2 kg
  • Capsicum - 1
  • Soya sauce - 1 tsp
  • Chilli powder - 2 tsp
  • Garam masala - 1 tsp
  • Corn flour - 2 tsp
  • Ginger-garlic paste - 1 tsp
  • Salt to taste
  • Coriander leaves - 1/4 cup, chopped
  • Onion - 1, big
  • 1 tsp - cumin seeds
  • Green chillies - to taste
  • 2- Tomatoes

How to Make Brinjal-Capsicum Gravy

  • Heat oil in a pan and splutter the cumin seeds.
  • Add onion, ginger-garlic paste, green chillies and saute until the onion turns pink.
  • Add sliced brinjal. Sprinkle salt and fry until the brinjal is partially cooked.
  • Add capsicum, tomato, the spices, soy sauce and salt to taste.
  • Fry until the vegetables are soft.
  • Mix corn flour with water and add to the gravy. Boil until the gravy thickens.
  • Garnish with coriander leaves and serve hot with chapati.
