Ingredients

  • 0.25 kg - brinjal
  • 5 to 6 - green chillies
  • 1 tsp - chana dal
  • 1 tsp - urad dal
  • 0.25 tsp - jeera
  • 1 tsp - mustard seeds
  • a pinch - hing
  • 0.25 tsp - turmeric
  • 3 tbsp - oil
  • 0.5 - fresh coconut
  • 1 tsp - ginger paste
  • salt as per taste

How to Make Brinjal Curry (Andhra Style)

  • In a kadai, heat oil and fry all the seeds.
  • Once done, add the brinjal pieces and turmeric. Mix well and cover with a lid. Cook till brinjal becomes tender.
  • Make a paste of coconut, green chillies and ginger.
  • Add this paste to the brinjal pieces.
  • Add salt and mix well
  • Serve hot with rice.
