Ingredients

  • Brinjal of medium size - 2
  • Onion - 1
  • Garlic - 4 cloves
  • Pepper - 1/4 tsp
  • Curry leaves - few, chopped fine.
  • Chilli powder - 2 tbsps
  • Ginger - 1/4 inch
  • Turmeric powder - 1/4 tbsp
  • Salt to taste.

How to Make Brinjal Fry with Garlic

  • Make a paste of onion, garlic and ginger. Add chilli powder, turmeric powder, salt, pepper and mix it thoroughly
  • Cut Brinjal vertically to get thin slices.
  • Cover the slices with the above paste and keep aside for 10 minutes
  • Deep fry the slices in oil.
