  • Mustard-1/2 tsp
  • Urad Dal-1/2 tsp
  • Turmeric Powder-1/2 tsp
  • Fenugreek-1/2 tsp
  • Red Chilli-2
  • Coriander Leaves-1/4 bunch
  • Oil-1 tsp
  • Salt-to taste

How to Make Brinjal Kothamalli Thokku

  • Roast brinjal on gas stove by smearing some oil on the surface. Once roasted, cool it down and peel off the skin.
  • In a pan, add oil, mustard, urad dal, red chilli, turmeric powder and fenugreek seeds. Once they splutter, add chopped coriander leaves and switch off the flame.
  • In a mixing blender, add this mixture along with salt. Add roasted and peeled brinjal and grind to a paste. This can be served with idli, dosa, chapathi and rice.
