Ingredients

  • 250 g - brinjal
  • 1 cup - curd
  • 1/2 cup - grated coconut
  • 2 cm piece - ginger
  • 2 - green chillies
  • 1 - red chilli, broken into two pieces
  • 3 tbsp - oil
  • 1/2 tsp - mustard seeds
  • 1 tsp - black gram dal
  • 2 tbsp - coriander leaves, chopped
  • A few - curry leaves
  • Salt - to taste

How to Make Brinjal Pachadi

  • Chop brinjal into 1 cm cubes
  • Sprinkle with little salt and leave aside for 15-20 mins
  • Grind coconut with green chillies and ginger to a coarse paste
  • Squeeze the brinjal pieces to remove excess moisture
  • Heat the oil and add mustard
  • When it splutters, add black gram dal
  • When it turns golden brown, add red chilli and curry leaves.
  • Add brinjal, stir fry for 2-3 mins
  • Keep covered on low heat till it is cooked
  • Remove from fire and let it cool
  • Beat the curds till they are smooth and add it to the brinjal
  • Add salt to taste
  • Garnish it with coriander leaves
  • Serve
