  • 1 - big violet brinjal
  • 2 cup - fresh curd
  • 1 - medium onion, finely chopped
  • 1 - medium tomato, finely chopped
  • 2 - green chillies, finely chopped
  • A few - finely chopped coriander leaves for garnishing
  • 1 tsp - mustard seeds
  • 2 tsp - oil for frying
  • Salt to taste

How to Make Brinjal Raitha

  • With a skewer, pierce and roast the brinjal over open flame on the gas stove
  • Peel the skin of the brinjal and get the cokked pulp
  • Mash the pulp with a spoon and add this to the fresh curd
  • Heat the oil for frying and splutter the mustard seeds
  • Switch off the gas stove and pour the seeds over the curds and brinjal
  • Add chopped onion, tomatoes and green chillies
  • Add salt to taste and mix well
  • Serve with any pulao or flavored rice.
