  • 1 kg - brinjals sliced
  • 3 - 4 large onions sliced
  • 1/2 inch - ginger minced, fresh or powder
  • 3 - chillies minced
  • Vinegar to taste
  • Salt to taste
  • 1 cup - thick coconut milk

How to Make Brinjal Salad

  • Marinate the sliced brinjals with any masala for 1/2 hour
  • Shallow fry and keep aside
  • Mix minced items, add vinegar and salt
  • Layer brinjals, minced mix and sliced onion
  • Lastly add coconut milk
  • Can be eaten either hot or cold
