Ingredients

  • 500 g - brinjal
  • 1 kg - curds
  • 3-4 - green chillies
  • 3 tbsp - coriander leaves
  • Salt
  • 4 tbsp - ghee
  • 1 tbsp - ginger garlic paste
  • 3 tsp - cumin seeds
  • 1 tsp - powder of cinnamon cardamom and nutmeg

How to Make Brinjal Stew with Curds

  • Mix ginger garlic paste with jeera
  • Add this to the mixture of cinnamon, cardamom and nutmeg powder with chillies and coriander
  • Divide into 2 portions. Rub half mixture into brinjal and add the other into the curds
  • Heat ghee, fry brinjal on very low heat till done
  • Add curds and mix well. Simmer for 2 mins
  • Serve with brown rice
