  • 1 - big brinjal
  • 3 - green chillies, chopped
  • Salt to taste
  • 1 tsp - mustard seeds
  • 1 tsp - oil
  • 1 tsp - urad dal
  • 1 tsp - channa dal
  • Coriander leaves - 1/4 bunch
  • Curry leaves - 2 sprigs
  • 4 cup - yogurt or thick curd

How to Make Brinjal Thair Bhaji

  • Apply oil on brinjal and bake at 350 degrees in an oven for about 20 minutes
  • Keep the brinjal in the oven for some more time if it's not soft enough to peel the skin
  • Heat oil in a pan and splutter the mustard seeds.
  • Now add urad dal, channa dal, green chillies and curry leaves.
  • Fry till the dal turns brown
  • Remove the pan from the flame and transfer the mixture to a vessel
  • Add yogurt and salt
  • Peel the skin of the brinjal and add the brinjal to the mixture in the vessel and mix well
  • Add the coriander leaves
  • Serve with rice
