  • paneer - 100 gm
  • small tender brinjals - 1/2 kg
  • oil - 4 tbsp
  • coriander seeds - 3 tsp
  • Bengal gram (Channa) Dal - one and a half tsp
  • black gram (Urad) Dal - one and a halftsp
  • red chillies - 6
  • asafoetida - 1/2 tsp
  • mustard seeds - 1 tsp
  • salt to taste

How to Make Brinjals Stuffed with Paneer

  • Cut away the stalks and slit the brinjals into flour, keeping them joint at the base.
  • Grate the paneer.
  • Heat 2 tsp of oil and roast coriander seeds, Bengal gram Dal, black gram Dal, red chillies and asafetida.
  • Cool and powder coarsely.
  • Mix the powder with salt and paneer.
  • Stuff the brinjals with this mixture.
  • Heat the remaining oil and add mustard.
  • When it crackles, add the brinjals.
  • Cover and cook slow flame till brinjals are tender.
  • Serve hot with steamed rice and Dal.
