  • 1 - small broccoli (cleaned and chopped)
  • 1 cup - rice (soaked for 10 minutes and drained well)
  • 1 - onion (medium size, chopped into thin slices)
  • 1 - Bay leaf
  • 1 tsp - ghee or butter
  • 2-3 - tsp - oil
  • 5-6 - green chillies
  • 1 tsp - ginger paste
  • 1 tsp - garlic paste
  • salt to taste
  • Powder the following: 2-3 - cloves
  • 1" cinnamon stick
  • 1 pod - cardamom

How to Make Broccoli Rice

  • Heat oil in a vessel large enough to cook the rice.
  • Drop the bay leaf in it.
  • Add the sliced onions, ginger paste and garlic paste.
  • Fry until the onions are soft and the raw smell of ginger-garlic paste is gone.
  • Add the chopped broccoli, salt, green chillies and powdered masala of cloves, cinnamon and cardamom.
  • Fry for about 5 minutes.
  • Add ghee or butter.
  • Add the rice and fry until it starts to turn brown.
  • Add 2.5 cups of water to the rice and cover.
  • Keep stirring in between, adding more water if the rice needs to cook for some more time.
  • Serve the rice with onion, tomato and cucumber raita.
