Ingredients

  • 2 cups rice (preferably basmati rice)
  • 1 big onion (finely vertically sliced)
  • 5 green cardamoms
  • 1 small stick cinnamon
  • 1 tsp - red chilli powder
  • 4 cups - water
  • 1 tsp - cumin seeds
  • 4 to 5 tbsp - oil
  • 2 bay leaves
  • 3 cloves
  • salt to taste

How to Make Brown Rice

  • Pick, wash and soak the rice in water for 30 minutes.
  • Heat oil in a heavy bottom vessel.
  • Add cumin seeds, cloves, cardamoms, cinnamon and bay leaves.
  • Fry for a few seconds and add the sliced onions.
  • Fry the onions on a low flame till golden brown.
  • Once the onions turn golden, add red chillie powder and fry for a minute.
  • Add the soaked rice (water discarded) and mix well.
  • Add 4 cups water, salt to taste and mix once. Give it a boil.
  • After the first boil simmer. Cover with a lid.
  • Mix once or twice while the rice is being cooked.
  • Cook till the rice is done. Serve hot.
