  • 175gm - chicken fillet
  • 225gm - brown rice
  • 50gm - small button mushrooms
  • 100gm - peeled prawns
  • 50gm - peas
  • 1 onion, sliced
  • 2 cloves garlic, crushed
  • 750ml - chicken stock, boiling hot
  • pepper to taste
  • salt to taste

How to Make Brown Rice Risotto

  • Place the chicken on a roasting rack and cook at 240 C/medium-low for 10 minutes. Dice.
  • Place the onion, garlic, stock, rice, and mushrooms in a large casserole.
  • Cover and cook on at 220 C/medium-low for 30 minutes, or until most of the liquid is absorbed.
  • Stir in the prawns, peas, and chicken and cook uncovered on combination 200 C/low for 5 minutes.
  • Adjust the seasoning and serve.
