Ingredients

  • 1 cup - Uncooked brown rice
  • 3 cups - Chicken broth
  • 2 - Carrots, sliced
  • 1/2 cup - Chopped onion
  • 1/2 cup - Chopped celery
  • 1 cup - Chopped spring onion
  • 1/2 tsp - Minced garlic
  • 1/4 tsp - Minced ginger
  • 6-7 - Tomatoes, peeled and chopped
  • 1/2 cup - Shelled peas
  • Salt as per taste
  • 1/4 tsp - Pepper powder
  • 1/2 tsp - Oregano
  • 1/2 tsp - Thyme
  • 2 tbsp - Chopped coriander leaves

How to Make Brown Rice Stew

  • In a large sauce-pan, mix all the ingredients except oregano, thyme and coriander leaves. Bring to a boil
  • Reduce the heat and let it simmer, stirring occasionally
  • Let it cook till rice is tender, approx 50 mins.
  • Add oregano and thyme
  • Stir and let it simmer for another 2-3 min
  • Transfer it into a serving dish, garnish with coriander leaves.
