Ingredients

  • white fish fillets - 350 gm
  • spinach - 2 cup, roughly chopped
  • cooked brown rice - 2 cup
  • green chillies 2, chopped
  • ginger 2 cm slice, chopped
  • garlic 4 flakes, chopped
  • mint leaves - 3 tbsp, chopped
  • coriander leaves - 3 tbsp, chopped
  • olive oil - 1 tbsp
  • cloves 2
  • cinnamon 5 cm piece
  • onion - 1/4 cup, thinly sliced
  • lime juice - 2 tbsp
  • salt to taste

How to Make Brown Rice with Fish and Spinach

  • Cut fish into 3 cm cubes.
  • Crush green chilli, ginger, garlic, mint and coriander together.
  • Toss fish with this mixture and salt to taste.
  • Marinate for 15 minutes.
  • Heat oil in a non stick fry pan.
  • Add cloves, cinnamon and onion.
  • Fry onion on a low flame till softened.
  • Add fish and chopped spinach.
  • Cover and simmer till fish and spinach are cooked.
  • Add brown rice and mix gently.
  • Leave on a low flame for 5 minutes.
  • Serve hot sprinkled with lime juice.
