  • 3 - large capsicum
  • 4 - medium sized, white brinjals
  • 1 - large tomato
  • 1 - medium sized onion
  • 2 tbsp - freshly grated coconut
  • 1 tsp - chilli powder
  • 1/4 tsp - turmeric powder
  • 1 tbsp - garam masala powder
  • A few - curry leaves
  • Salt to taste
  • 2 tbsp - oil

How to Make Capsicum with brinjal

  • Deseed the capsicums and cut them into cubes.
  • Cube the brinjals too. Immerse them in cold water.
  • Heat the oil in a kadai and fry the finely minced onion to a golden brown.
  • Then add the curry leaves.
  • Now mix in the finely cut tomato and the powders. Fry for sometime.
  • Drain the capsicum and brinjal cubes from the water and add it to the masala in the kadai.
  • Pour in a cup of water and add salt.
  • Simmer till cooked and dry.
  • Just before serving sprinkle the grated coconut on the top.
