  • 1 cup - basmati rice
  • 4 cup - milk
  • 2 tbsp - raisins
  • 2 tbsp - walnuts, chopped
  • 2 tbsp - almonds, peeled and chopped
  • 1 tsp - vanilla essence
  • 1 cup - sugar
  • 2 cup - fresh yogurt

How to Make Caramel Rice Pudding

  • Wash the rice, add milk and cook till the rice is very soft and most of the milk is absorbed.
  • Stir in the raisins, nuts and essence.
  • Place the sugar in a thick bottomed pan. Sprinkle with 2-3 Tbsp of water.
  • Place on a mode flame and cook without stirring till the sugar melts and turns a rich brown caramel.
  • Remove from fire. Add ¼ cup of very hot water and stir to dissolve the caramel. It will be like a thick sauce.
  • Add the caramel sauce to rice. Cool and place in refrigerator.
  • Beat the yogurt till smooth and add to the chilled rice mixture. Serve chilled.
