Ingredients

  • 2 cups - grated carrot
  • 1 cup - chopped dates
  • 1 cup - chopped cashew
  • 2 cups - sugar (powdered)
  • 3 - eggs, separated
  • 2 cups - maida
  • 1.5 cups - refined oil
  • 1 tsp - baking powder
  • 1 tsp - soda bi-carbonate
  • 1 tsp - vanilla.

How to Make Carrot and Dates Cake

  • Preheat oven to 190 C.
  • Sieve flour together with baking powder and soda.
  • Mix and beat well the powdered sugar and oil. Add egg yolks and beat well.
  • Add chopped dates, cashews and grated carrot.
  • Add maida and mix well. Add cardamom powder.
  • Beat egg whites stiff and fold into carrot mixture.
  • Place in a greased cake tin and bake until done.
