Ingredients

  • carrot - 250 gm
  • tinned pineapple 2 to 3 slices
  • ginger 3 cm
  • soya/sunflower oil - 1 tbsp
  • orange juice - ¼ cup
  • lime juice - 1 tbsp
  • dark soya sauce - 2 tsp
  • sugar - 1 tsp
  • coriander leaves - 2 tbsp
  • pepper to taste
  • salt to taste

How to Make Carrot and Pineapple Salad

  • Peel and cut carrots into match sticks.
  • Drain the pineapple slices and chop and mix with carrots.
  • Crush the ginger and squeeze the juice.
  • Combine ginger juice with oil, orange juice, lime juice, Soya sauce, salt, pepper and sugar.
  • Pour over the carrot pineapple mixture and toss well.
  • Serve garnished with coriander leaves.
