Ingredients

  • 2 cups - basmati rice
  • 2 - fresh carrots, grated
  • 2 - onions, chopped
  • 1 tsp - dhania seeds
  • 1 tsp - cumin
  • 5 pieces - red chillies
  • 1/2 cup - grated dry coconut
  • 2 tsp - cashewnuts
  • 2 - cinnamons
  • 2 - cloves
  • 1 cup - peanut powder
  • oil as required
  • salt to taste

How to Make Carrot Rice with peanut powder

  • Cook the rice and keep it aside.
  • Warm the dhania seeds, cumin, red chillies and dry coconut on low flame and grind to make a dry masala.
  • Heat oil. Add the cinnamon, cloves and cashewnuts.
  • Add the onions and fry until golden.
  • Add the grated carrots and leave it on low flame for 2 minutes.
  • Add the cooked rice and salt and the dry masala.
  • Add peanut powder and mix well.
