  • Basmati rice - 1 cup
  • Carrot - 1/2 kg
  • Onion - 2, large
  • Red chilli - 4
  • Coriander seeds - 1.5 tsp
  • Jeera - 3/4 tsp
  • Peanut - 2 tbsp
  • Coconut - 2 tbsp, scraped
  • 1 - cinnamon stick
  • 2-3 - cloves

How to Make Carrot Rice with Peanuts and Coconut

  • Cook the rice separately and keep aside.
  • Scrape the carrots and dice the onions.
  • Fry the red chillies, coriander seeds and jeera and 2 tbsp scraped coconut in 1 tsp of oil and grind into a fine powder.
  • Heat oil, add the cinnamon and cloves and saute until brown.
  • Now add the diced onions and cook for 5 minutes.
  • Add the scraped carrots and cook until tender. Add salt to taste and the powdered masala.
  • Fry for a minute, then add the cooked rice.
  • Saute the peanuts in a pan and beat into a coarse powder.
  • Garnish the rice with the peanut powder.
