Ingredients

  • 12 - bread slices
  • 4 tbsp - melted butter
  • For Filling:
  • 1 cup - cauliflower pieces, cooked
  • 1/2 cup - spring onion, chopped
  • 1/2 cup - milk
  • 1/2 tin - sweet corn cream style
  • 2 tbsp - butter
  • 1 tbsp - maida
  • 2 tbsp - parsley, chopped
  • 4 tbsp - grated cheddar cheese
  • Salt and pepper to taste

How to Make Cauliflower and Corn Cups

  • Cut rounds from bread slices, using a biscuit cutter.
  • Greas 12 cup cake moulds with butter. Press a slice of bread in each mould.
  • Smear slices with remaining butter.
  • Bake in a moderate oven (180 0 C) till brown, about 15- 20 mins
  • Take out the cases from the mould 15 minutes after baking and cool them completely.
  • Store in an air tight container. Just before serving, add the filling and garnish with tomato strips and spring onion greens.
  • For Filling:
  • Heat butter and saute spring onions.
  • Add maida, fry for 1 minute.
  • Add cauliflower, sweet corn, milk, parsley salt and pepper.
  • Cook stirring till the mixture begins to boil.
  • Stir in the cheese and remove from fire.
