  • 1 large cauliflower, broken into pieces
  • 4 tbsp. butter
  • ¼ cup all purpose flour
  • ½ tsp. English mustard powder
  • 2 cups milk
  • 1 cup shredded sharp cheddar cheese
  • 3 tbsp. pumpkin seeds

How to Make Cauliflower Cheese Gratin

  • Cook the cauliflower in a large saucepan of boiling water for 5-6 minutes, until tender.
  • Meanwhile, melt the butter in a small saucepan, then stir in the flour and mustard powder to make a roux.
  • Cook for 1-2 minutes, then gradually whisk in the milk and cook, stirring continuously until the sauce is thick and smooth.
  • Simmer for 1 minute, then stir in half the cheese.
  • Drain the cauliflower and place in an ovenproof dish.
  • Pour the cheese sauce over the cauliflower, then sprinkle with the pumpkin seeds and remaining cheese.
  • Cook under a preheated hot broiler for 2-3 minutes, until bubbling and golden.
