Ingredients

  • 1 - trout
  • 1 tsp - lemon juice
  • 1/2 tsp - turmeric
  • 1/2 tsp - salt (or to your taste)
  • 1 pea-sized - ginger piece
  • 2 cloves - garlic
  • 2 - green chillies
  • 5 - curry leaves (optional)
  • 1 tsp - coriander leaves (cilantro)
  • 2 tbsp - oil
  • 2 tsp - curry powder (American version)
  • 5 florets - cauliflower

How to Make Cauliflower Trout

  • Cut the trout across (like fish steaks).
  • Discard the tail.
  • Pound the garlic, ginger and green chillies with a pestle in a mortar.
  • Rub the fish with the paste and lemon juice, salt and 1 tsp of curry powder.
  • Let this marinate for 15 minutes.
  • In a hot, thick skillet or pan fry the fish steaks flesh side down.
  • Then, turn over to fry the flat body. The skin may separate.
  • In a sauce pan add 1 tbsp of oil and fry the cauliflower.
  • Throw in the remainder of the curry powder.
  • Add salt to taste. Remember the fish had its own share of salt in the marinade.
  • The cauliflower should be cooked to a point where it does not disintegrate.
  • Add the fish and continue to steam for the flavours of the flower to penetrate the trout.
  • Garnish with cilantro.
